Miniature Mexican Frittatas

Ingredients:

1 –  10-ounce pkg. frozen chopped spinach, thawed, and squeezed to strain excess water

1 cup cottage cheese, strained

!/2 cup grated parmesan cheese

1/2 cup (2 ounces) shredded cheddar cheese (I love sharp)

4 eggs

1/4 cup milk

1 tsp ground cumin

1/2 tsp black pepper

pinch of turmeric powder

2 TBS chopped cilantro or parsley

salsa, warmed

sour cream, optional

Directions:

In a bowl combine spinach, cottage cheese, parmesan cheese, and cheddar cheese. In a separate bowl stir together eggs, milk, cumin, pepper, and turmeric. Stir into the spinach mixture, adding cilantro or parsley. Mix well.

Spoon mixture into a lightly greased 12 muffin pan. Bake uncovered, 375 degree oven for 20-25 minutes or until the eggs are set. Let rest for 5 minutes before serving.

Serve with warmed salsa and a dollop of sour cream, a side salad and fresh fruit for a complete and nutritious meal.

Makes 12 mini frittatas or 4 servings.

Bonus tip:

I save the squeezed liquids from the spinach and use it as a vegetable broth for the week. I do this with all my steamed or par-boiled vegetables, including potato water  adding their liquid to a jar, combining them and using them for steam frying or as a vegetable broth in meals or baking.

I also save the liquid from the cottage cheese so nothing is wasted.

As expensive food is becoming we must ensure we waste little to nothing and capture as much of the nutrients and vitamins that we can. It’s a win-win in my book.  Save money and gain health? Absolutely!

This recipe has been a favorite for much of my life. I hope you enjoy it as much as I do. Of course,  spinach can be replaced with your favorite greens, mine being moringa, and wild foods such as lambs quarters, curly dock, plantago and many more. I often will combine different greens for a variety of nutrition.
