Italian Almond Cookies

Italian Almond Cookies

 

 

 

 

 

 

 

Ingredients:

3 cups almond flour

1/2 cup cane sugar

Pinch salt

1 lemon rind, grated

1 tsp vanilla extract

1/4 tsp almond extract

3 egg whites

Powdered sugar

Whole almonds or sliced

 

Directions:

Mix all ingredients together well except powdered sugar and whole almonds. Make small balls. 

Toss in powdered sugar.

Press almond on top of each one as you press down the cookies- but don’t flatten too much. 

Bake at  325 degrees for  15 minutes

Let cool on wire rack.

This is a family favorite and always a big hit with our friends.  I love how quickly these cookies come together.
